Skillet-fried Spiny Lobster Tails in Butter and Garlic:

  • 4 spinny lobster tails
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

  1. Thaw the spinny lobster tails if they are frozen. To do this, place them in the refrigerator for several hours until they are completely thawed.

  2. Using kitchen shears, cut through the top of each lobster tail shell lengthwise down the center. Use your fingers to gently pull apart the shell to expose the lobster meat, being careful not to pull it out of the shell.

  3. Heat a large skillet over medium-high heat. Add the butter and minced garlic to the skillet and cook for 1-2 minutes, or until the garlic is fragrant and the butter is melted.

  4. Season the lobster tails with salt and pepper on both sides. Add them to the skillet, flesh side down, and cook for 3-4 minutes, or until the shells turn bright red and the flesh is opaque.

  5. Use tongs to flip the lobster tails over and cook for an additional 2-3 minutes, or until the flesh is lightly browned.

  6. Remove the skillet from the heat and sprinkle the chopped fresh parsley over the lobster tails.

  7. Serve the skillet-fried spinny lobster tails hot, with additional garlic butter spooned over the top, if desired.
