Grilled Korean Short Ribs with Zucchini Side

Ingredients: For the Short Ribs:

  • 2 lbs. beef short ribs, cut across the bone into thin slices
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 tbsp. sesame oil
  • 4 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1/2 tsp. black pepper

For the Zucchini Side:

  • 3 medium zucchinis, sliced into rounds
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • Salt and pepper, to taste

Instructions:

  1. In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, thinly sliced green onions, and black pepper. Add the sliced short ribs to the mixing bowl and toss until the meat is evenly coated with the marinade. Cover the bowl with plastic wrap and let the meat marinate in the refrigerator for at least 1 hour, or up to 24 hours.

  2. Preheat the grill to medium-high heat. Thread the marinated short ribs onto skewers, discarding any excess marinade.
