Barbecued Chicken Thighs with Grilled Asparagus, Broccoli and Tomatoes Recipe:

Ingredients: For the barbecued chicken thighs:

  • 8 chicken thighs, skin on
  • 1/2 cup barbecue sauce
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the grilled asparagus, broccoli and tomatoes:

  • 1 bunch asparagus, tough ends trimmed
  • 1 head broccoli, cut into florets
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions:

  1. Preheat a grill or a grill pan over medium-high heat.
  2. In a small bowl, whisk together the barbecue sauce, olive oil, apple cider vinegar, minced garlic, smoked paprika, salt, and black pepper.
  3. Brush the chicken thighs generously with the barbecue sauce mixture on both sides.
  4. Place the chicken thighs on the grill, skin side down, and cook for about 5-6 minutes on each side until browned and crispy. The USDA recommends cooking chicken to an internal temperature of 165°F (74°C) using a meat thermometer inserted into the thickest part of the meat, away from the bone.

  9. Serve the chicken thighs with the grilled asparagus, broccoli, and tomatoes on the side.
